Beverly Hills Hotels Are Rebuilding Their Restaurants for the People Who Live Here

The Beverly Hills Hotel's plans for its new supper club were developed, according to Beverly Press, "through conversations with neighbors and members of the surrounding community." The hotel built its reputation on visitors from around the world, so that is an unusual thing for it to say about the largest addition to the property since 1949.

It is also the latest in a series. Starting in spring 2025, hotel after hotel in Beverly Hills replaced, opened or reworked a restaurant or bar, and the access rules and hours of the new rooms point the same way. They are set up for someone who lives ten minutes away and wants a table on a Tuesday. Guests checking out on Sunday are no longer the only customers in mind.

The rooftop that used to require a room key

The first clear sign came from L'Ermitage Beverly Hills. In May 2025 the hotel unveiled a redesigned rooftop with two parts: The Arhaus Terrace, furnished with Arhaus's outdoor collection, and Poza, an open-air restaurant serving California fare, seasonal produce and coastal seafood alongside an expansive bar. Luxury Travel Advisor reported the key change. The rooftop had been "a guest-only venue" and "now welcomes all visitors" to its 360-degree views of the city.

That policy still stands. Poza's current page says non-hotel visitors are welcome, recommends reservations, and lists hours of 11 a.m. to 9 p.m. daily. The Beverly Hills Courier points to sunset cocktails, lobster rolls, poke bowls and a Brussels sprout Caesar, with a DJ or a sound bath on some nights.

A rooftop pool deck is the most private space a hotel owns. Opening it to the public changes what the property is for, and the other hotels moved in the same direction over the following year.

A bar pitched to locals by name

Four months later, The Maybourne Beverly Hills converted The Maybourne Bar, the small marble bar off its lobby, into a caviar-and-oyster bar with N25 Caviar. The concept opened September 18, 2025. The hotel's announcement left no doubt about the intended audience. Its executive chef described the hotel as "dedicated to bringing world-class dining experiences to guests and locals alike," and said the idea came from noticing that "Beverly Hills didn't currently have a dedicated caviar or oyster bar experience."

The idea started from what was missing in the city, and the format suits a resident who stops in after work. The bar's current listing prices the Caviar Omakase at $85 per person, takes reservations but also welcomes walk-ins, and runs from 5 to 11 p.m. Sunday through Wednesday and until midnight Thursday through Saturday. The Courier lists a loaded tater tot with whipped crème fraîche among its ten items, along with East and West Coast oysters and an aguachile shooter à la carte.

The Waldorf Astoria replaced both of its restaurants in one year

The Waldorf Astoria Beverly Hills made the biggest change. Downstairs, the dining room has been through several tenants. Jean-Georges Beverly Hills closed in May 2023, as Eater LA reported at the time, and Espelette was announced for the space within days. The room's current occupant is Baldi, a Tuscan steakhouse from Edoardo "Edo" Baldi, which opened February 18, 2026.

The choice of chef is the local part. The Courier traces Baldi's cooking to a family legacy that includes Giorgio Baldi in Santa Monica and e.Baldi, which has operated in Beverly Hills for more than two decades. The hotel brought in a name already familiar to anyone who has eaten on Cañon Drive in the past twenty years. The Los Angeles Times reviewed Baldi in July 2026. When it opened, Hilton announced dinner Wednesday through Sunday. The hotel's current listing shows the restaurant open 5 to 10 p.m. daily and Bar Baldi open until 11. Baldi now serves on the two weeknights it originally left dark.

Upstairs, Gemma took over the former rooftop space and opened in May 2026. It is a California-inspired Pan-Asian restaurant and bar led by chef Peleg Miron, with an all-day patio designed by Marc Ange. The Courier names grade A Hawaiian tuna, dim sum, Singaporean noodles with lobster and green curry whitefish from Miron's small-plates menu. The schedule shows who it is for. Gemma serves from 11:30 a.m. to 10 p.m. on weekdays and runs a brunch from 11 a.m. to 2 p.m. on Saturday and Sunday before weekend dinner service starts at 2 p.m. A weekday lunch and a weekend brunch on a hotel rooftop both depend on people who are not staying the night.

Both Waldorf rooms take reservations through OpenTable.

Malka sets a weekly rhythm

Malka at SIXTY Beverly Hills, at 9360 Wilshire Boulevard, opened in late summer 2026. It is chef Eyal Shani's first full-service restaurant in Los Angeles. The menu is seasonal, built around its ingredients, and fully kosher. The Courier highlights the Queen Malka Schnitzel, a chicken schnitzel stuffed with mashed potatoes, along with Branzino Hraime, a flatiron steak with tomato seeds, and the hummus Shani calls "very Israeli."

Malka is shaped around the week. It serves dinner from 5:30 to 10 p.m. Sunday through Thursday, with no Friday or Saturday service. The whole operation depends on weeknight tables. Reservations are on Resy.

The Beverly Hills Hotel's largest addition since 1949

Taken together, those four openings give context for the opening still to come. On October 8, 2026, Beverly Press reported that The Beverly Hills Hotel will open The Supper Club off its lobby later this year. The room, designed by Ken Fulk, will seat 94 for dinner and live entertainment. Chef Mattia Agazzi, formerly head chef of Gucci Osteria Beverly Hills, is writing an Italian menu with California produce, seafood, meats and handmade pasta.

The expansion also includes:

  • a cocktail bar with an outdoor veranda overlooking the Los Angeles skyline
  • an indoor-outdoor lobby lounge serving coffee, high tea and locally sourced food during the day, then cocktails and small plates in the evening
  • a screening room
  • a private dining room

According to Beverly Press, the plans were first conceived about a decade ago, and the expansion is the largest addition since architect Paul Revere Williams designed the Crescent Wing in 1949. The lobby lounge is the piece that matters most for residents. A room serving coffee in the morning and high tea in the afternoon is a daytime meeting place, the kind of use a hotel lobby rarely invites from people who are not guests. The Polo Lounge, the Fountain Coffee Room and the Cabana Cafe will stay as they are. No opening date has been announced.

Where the next openings are

Two more projects carry the change into 2027. Noble 33, the hospitality group, has announced a Japanese steakhouse with an izakaya under the same roof at Rosewood Residences Beverly Hills, planned for 2027. It has not yet published a name for the venue or an opening date. The Beverly Hilton is partway through a broad renovation that Forbes Travel Guide reported as scheduled for completion in 2027, and that report still lists CIRCA 55 as its operating restaurant.

The established rooms are holding steady. At the Beverly Wilshire, Wolfgang Puck's CUT is marking twenty years since it opened in June 2006. The Peninsula continues to take reservations at The Belvedere. The new rooms are being added around these institutions. None of them has replaced one.

For a resident deciding where to book this week, here is how the new rooms fit together. Poza and Gemma cover lunch with a view. The Maybourne Bar works for a walk-in drink before 11 on a weeknight. Malka is for Sunday through Thursday dinner, and Baldi now serves every night. The Supper Club will add live music and a daytime lobby lounge once it opens. Hours listed here are as of mid-October 2026 and change often, so confirm with each venue before you go.

At The Smith Associates, we follow these openings because the places that open their doors to residents shape how each street of the city is used day to day. If you would like to talk about how Beverly Hills is changing block by block, we welcome you to book an appointment.
